A few weeks ago, Pete’s mom came to visit. I decided to use the opportunity to spend a little time in the kitchen for 3 reasons: 1 – She makes great meals for us when we visit MN; 2 – I needed to crack open a couple of recipe books; and 3 – I’ve been failing at my New Year’s resolution to try a new recipe each week.
Here’s what I made while she was here:
Stuffed avocados and tortilla chips
Curry chicken, jasmine rice and asparagus
Potato pancakes and salad with toasted almonds and mandarin oranges
Stuffed peppers (took this one to Bible study)
A huge breakfast, which rarely happens
Butternut squash soup and rolls
Yogurt and fruit parfaits
